Egg-based Recipes: Bell Pepper And Kale Frittata
If you’ve grown weary of your dreary old meat-based recipes, perhaps something along the lines of vegetarian food is needed to freshen up your diet and palette.
The egg-based Italian dish of frittatas is definitely recommended here.
While frittatas are typically accompanied by additional ingredients like meat, this all-veggie recipe completely removes them from the equation for a hearty, healthy meal.
1/2 cup milk
1/2 cup kale, chopped
1/3 cup bell pepper, diced
1/4 cup feta cheese, crumbled
- Whisk eggs and milk in a bowl. Add a drizzle of olive oil in an oven-safe pan and heat the pan over medium-low heat. Once it starts to shimmer, add the greens (kale and bell pepper). Season everything generously with salt and pepper. Sauté the contents of the pan until the pepper is tender, which should take around 10 minutes.
- Pour the eggy milk mixture into the pan, then sprinkle a pinch of feta cheese on top. Cook the eggs until it’s fully set, making sure to push in the edges occasionally. Once cooked, remove from the heat.
- Place the pan (with eggs and veggies and all) in an oven and broil on high until the top is lightly browned. This should take about 4 minutes. Once browned, remove from oven and serve immediately.
